Nostalgic nan khatai


This is a lovely goody which reminds me of my childhood days..oh the carefree once where you dont need to worry of lot many things..just play eat, study(that used to look like a big thing!)
My aunt loved baking and always used to bring this for me when she visited us. I loved it and kiddishly used to call it "nani ki tai" ...just breaking up the words and mean something totally different.

Sharing this mouth melting cookies with you, original recipe is here, just made few modifications..loved it all over again!


Ingredients:
  • 1 cup Whole wheat flour
  • 1/2 cup Gram flour, besan
  • 1/4 cup semolina, sooji
  • 1/2 cup coconut powder
  • 1 cup Sugar
  • 1 cup Ghee ( clarified butter )
  • 1 tsp rose water
  • 1 tsp Cardamom powder
  • 1 tsp Cinnamon powder
  • Handful of cashews , for garnishing 

Method:

    • Sieve all the flours together and mix cardamom powder, Cinnamon powder and rose water to it properly.
    • Melt the ghee and add sugar to it. Whisk for a while to get it mixed properly. It will take around 3-4 minutes of rigorous whisking to get the desired consistency.
    • Add this Ghee-Sugar mixture to the flours and start getting the dough together. It will not be like a proper pliable mass of dough but will be crumbly and tight.
    • Now make equal rounds of balls out of it and flatten them for a cookie shape. Place a cashews in the centre for garnish.
    • Bake them in a preheated oven for 10 min at 200 degrees. Check them once at this point and bake for another 5 minutes if required. Mine took precisely 13 minutes.
    • The cookie coming straight from the oven will be very delicate and crumbly. Give them some time to cool off , around 10 minutes. Enjoy while they are still warm, they will turn harder when cool completely.

Cherish the moments! - double slider layout

Our little miss has become so talktative..its just so much fun to listen to her. She's like a complete chatter box just at the age of 2! Sharing some of her cuteness with you all..
 - Her favourite numbers at the moment (believe me she knows full lyrics and sings atleast 75% of it correctly!) "Sa re ke sa re ga ma ko le kar gate chale", " Bache mann ke saache, sare jag ki..", "haina bolo bolo, haina bolo bolo..", " hum bhi agar bache hote"
- Fourite rhymes - (English) Baba black sheep, old mac donald had a farm
                         - (Hindi) Me me me bakri, chal chal ke char ghas hari, meetha meetha dudu, gatak gatak ke khoob piyu..takat aati tab itni ek bade haathi jitni, mujhe dekhkar dangal me sher bhagega jangle me"
                         - Chu chu karti aayi chidiya, daal ka dana layi chidiya..

Coming to my layout, I made a double slider layout for the first time. Gave the page a wash of yellow color to get this lovely bright background.
Decorated the border with stickers. The little is "Cherish" using little alphabet characters having fun! The pics are from our New Zealand trip.
The double slider adds a nice interactive element to the baby book.
